Smoky Potato Gratin (For BBQ)

"DH and I made this recipe on the BBQ last night to accompany Grill Roasted Chicken with Chimichurri Rojo. From Williams-Sonoma. We enjoyed the potatoes very much. We easily halved the recipe, but still used 2 garlic cloves. We also used salted butter and this was fine."

  • Bring a large pot of water to a boil over high heat. Salt the water. Add the potato slices and cook until they are slightly softened but not completely tender, about 8 minutes. Drain the potatoes well and let cool.
  • Prepare a charcoal or gas grill for indirect grilling over medium-high heat.
  • Using the side of a chef's knife, smash the garlic cloves and sprinkle with a generous pinch of salt. Continue smashing and scraping the garlic into a paste.
  • In a small saucepan over medium heat, melt the butter. Stir in the garlic paste, parsley and thyme, and season with salt and pepper.
  • Spray a mesh grill pan with nonstick cooking spray. Place 2 potato slices in the center of the grill pan, then create 2 separate rings of potato slices: Starting with the inner ring, arrange the slices, slightly overlapping the center slices as well as the previous slice, to create a fanned effect. Then form an outer ring of potato slices, slightly overlapping the inner ring.
  • Brush the first layer of potatoes with some of the garlic-herb butter and season with salt and pepper. Repeat to create a second layer on top of the first one. Brush the top layer with garlic-herb butter and season with salt and pepper.
  • Transfer the grill pan to the center of the grill and cover the grill. Cook, basting the potatoes with garlic-herb butter every 10 minutes, until they are tender and browned on top, 35 to 45 minutes.

  1. Loved the butter mixture but the potatoes on the bottom layer were very burned and had to throw them away. I cooked them at 300 deg. for the first 20 min. and then 375 for the last 10 min. while cooking the steaks.
     
  2. These are really good! I cooked them over indirect heat, but the potatoes on the outer ring got a little crisp. But they still tasted wonderful, sort of like a chip! A wonderful side dish for anything you cook on the grill. Thanks for sharing! Made for Photo Tag!
     
  3. We really enjoyed these potatoes! We didn't have a mesh grill pan so we made a foil packet and put them on the grill with the foil folded over into a parcel. DH said he thought it could use more garlic but then we do like lots of garlic! These potatoes had lots of flavour and we'll certainly make them again. Made for ZWT 7.

I work full-time as a School Psychologist in Michigan. Besides the kids, one of the best aspects of the job is summer vacation, when I can concentrate on doing more of the things that I like to do---like look up recipes and play games on Recipezaar!!! He's the better cook, so I pick up a lot of my techniques from him. My other interests include reading (now that I have time), Irish dancing (I've taken a class for the last several years), "appreciating" wine (I use the term very loosely), and listening to and going to see Irish bands (I love the Pogues). I also enjoy travelling, especially around Western Europe, where I have been multiple times. One of my favorite places is Italy, and Sean and I had a great time on our honeymoon eating, drinking, and sightseeing in the Cinque Terre and in Tuscany. This July 2009, we expanded our horizons to Eastern Europe and visited the Czech Republic, Slovenia, and Croatia. Two of my favorite dishes on the trip were Croatian: fish brodet and Hvarska gregada. I am looking forward to trying my hand at making them at home as I see that someone on Zaar, who is Croatian, posted recipes for both!
