  • 1 lb okra, chopped
  • 1 tablespoon oil
  • 1 (16 ounce) can whole tomatoes, with juice
  • 1 cup chopped onion
  • 12 cup bell pepper, chopped
  • 34 teaspoon chopped garlic
  • 1 (2 1/2 ounce) can sliced mushrooms, with juice
  • salt and pepper

Directions

  1. Pour oil in bottom of pan.
  2. Add the remaining ingredients.
  3. Cover pot and simmer 1 1/2 hours on low, stirring often.
  4. Remove the cover the last 10 minutes.
