Snappy Green Beans

"This is a recipe handed down to me by my mom. My husband and kids get excited when they see I have bought green beans, because they know they are in for a treat. As a lower fat option I omit the bacon, and cook the onions in a dash of canola oil. I save the bacon for when I serve it to company."

directions

  • Cook the green beans until tender.
  • Fry the bacon (if using) until crisp.
  • Drain and crumble.
  • Cook the onions in about 2 Tablespoons of the bacon fat, just until they are tender.
  • Toss the hot green beans, onion and bacon together.
  • Drizzle with the tarragon vinegar.

  1. My family loves this recipe. To save time I use 2 cans Green Beans. (Yes canned..I've had no complaints ;-) I also add 1/2 teaspoon salt.
     
  2. These are yummy green beans. I really enjoyed the flavor of the tarragon on these and bacon is a great addition to green beans. I will make these again!
     
  3. I loved the flavor that the tarragon vinegar added to this recipe. Dave did not. We used fresh green beans that were given to us yesterday. So good and so pretty on the plate. The only thing I did different was to slice the onions instead of chopping them. I'll be making this again for me, but not Dave. thanks for sharing.

I personally think the bacon flavor adds alot to the taste. I cut the recipe in half and it worked great!. Sorry it took so long for someone to try this 5+ star dish. I live on the beautiful Central Coast of California. I am a 46 year old single mom and student (I got my AA degree in business management May 05). I used to love to cook and try new recipes that is until my kids got to the point of...YUCK! I'm not eating that! (*cringes* and thinks of the drawers full little pieces of paper with recipes on them) My favorite cookbook is my mom's old (1930's) Better Homes and Gardens Cookbook. Followed closely by the "______ the Beautiful" series, of which California the Beautiful (of course) is tops on that list.
