Sneaky Baked Beans

- 1 small onion, chopped
- 1⁄2 red bell pepper, chopped
- 1 lb lean ground turkey (or 1/2 lb mixed with oatmeal and an egg to stretch it if you want)
- 1 medium sweet potato, cooked and mashed
- 1 (28 ounce) can busch's baked beans
- 1 cup homemade tomato soup (or more)
- 1 teaspoon Worcestershire sauce
directions
- Saute onion and bell pepper in a little oil in a large skillet.
- Add lean ground turkey and cook until done; drain fat if there is too much.
- Add mashed sweet potato and mix in well.
- Add baked beans, tomato soup and Worc. sauce.
- Thoroughly mix and cook, on simmer, until warmed through, 10 minutes or so.

I'm always interested in trying out how others put together their 'baked beans' & this one is great! I particularly like the addition of the ground turkey & the sweet potato! Took me a while to find some 'homemade' soup for this recipe, & it always intrigues me how some stores are able to stock can of soups that are labeled as 'homemade !' I am a Christian wife and mother of 3 kids. Since my DH's high cholesterol, we've been eating better. I never used to like cooking. Since eating better, I've liked learning and preparing new recipes. My kids haven't reconciled themselves to the new eating yet. I grind my own grain and make all my own breads.?Working 2 hours a day in the local high school lunch room.??I am homeschooling my high schooler.? ?Also found out 1 child has multiple food allergies (wheat, dairy, tomato, chocolate, etc) and another is gluten sensitive. So, we just started (July 09) eating gluten and dairy free. I've been busy with getting our house market ready, even though it's not the best time for that.?
