So-Easy Pasta With Fresh Herbs and Cold Tomato

  • Prepare 2 bowls: Put all ingredients except pasta in bowls (as much garlic as you can handle!); toss with olive oil.
  • Cook pasta (any kind of 'thin' pasta; 'thick' pasta like big rigatoni etc would not be ideal as they steal too much flavour: this dish has no sauce); add some butter and salt/pepper to pasta.
  • Put pasta on top of tomato/herb/cheese mix. Add some parmesan.
  • Toss just when ready to eat!

  2. Dani, This is a wonderfully tasty pasta salad. Very easy to prepare. I didn't have any fresh herbs and had to use dried. It still turned out great. I just added the olive oil and spices to my pan after I had drained the pasta. Stired it all up, put into bowls added the diced tomatoe and parmesean cheese and thourghly enjoyed. Thanks for posting.
