So Saucy Smothered Chicken

"Fast and easy, using what is mostly in the pantry/freezer. Use whatever type of chicken you have on hand (chicken breasts or thighs) diced turkey would also work too. A great meal when grocery shopping is the next day. Serve with rice or mashed potatoes."

  • 2 tablespoons oil
  • 500 g chicken, diced
  • 1 onion, sliced thinly
  • 1 cup mushroom, sliced
  • 1 teaspoon garlic, crushed
  • 1 tablespoon French onion soup mix
  • 1 (10 1/2 ounce) can cream of mushroom soup
  • 1 (10 1/2 ounce) can can cream of chicken soup
  • 12 cup sliced carrot
  • 2 cups broccoli
  • 14 cup frozen corn
  • 14 cup frozen peas
  • 12 teaspoon paprika
  • 14 teaspoon dried thyme

  • Heat the oil in a large pot.
  • Fry the chicken, onion and mushrooms together for about 4-5 minutes.
  • Add the garlic and fry until fragrant.
  • Add the soup mix and soups and stir well. Cook until almost boiling and reduce to a low simmer.
  • Add the vegetables and simmer for 15-20 minutes (or vegetables are all cooked).
  • Serve and enjoy.

I have a severe egg allergy and am lactose intolerant, I&nbsp;enjoy working out ways to still enjoy food minus eggs and milk. I have been married for 14 years and have one very happy and well fed hubby.<br />My goal is to try one new recipe a week, for the past 8 years have achieved this. &nbsp;I own over 300 cookbooks, but no longer purchase them - but regularly print out recipes to try later.<br />When I am not cooking, I am busy household of 6 and going to the gym (to work off the wonderful calories I consumed the day before) and helping at school and church.<br />My philosophy in life is: as we have to eat, we may as well eat well.</p>
