- 10 cherry tomatoes, chopped
- 1 green pepper, chopped
- 1 large onion, chopped
- 5 garlic cloves
- 1 pinch cumin
- 1 pinch oregano
- 4 tablespoons olive oil
- salt
- 3⁄4 cup sherry wine
directions
- Sauté tomatoes, pepper, onion, garlic, cumin and oregano in oil slowly until all vegetable are lumpy.
- Add sherry wine and simmer for about 20 minutes.

This is a superb recipe! Like a rich, yummy cooked salsa. I've never had sofrito before but you can bet I'll have it again. I added about 1/2 a jalapeno because I had it left over from another recipe & I simmered the sauce longer 'cause it was ready before my chicken. We ate it over chicken, rice and with black beans. Awesome everywhere! Made for PAC Spring 2008.
