- 2 turkey drumsticks, skinned
- 6 cups chicken broth (add water if you don't have enough broth to cover drumsticks)
- 4 whole cloves
- 1⁄2 cup chopped onion
- 2 cloves garlic, minced
- 1 1⁄2 cups mushrooms, sliced
- 1⁄2 tablespoon olive oil
- 1⁄2 teaspoon thyme
- 1⁄4 teaspoon nutmeg
- 4 cups chicken broth
- 1 1⁄2 cups mushrooms, sliced
- 2 tablespoons flour
- 3 1⁄2 ounces fideos noodles

- Simmer turkey drumsticks in chicken broth with whole cloves until cooked through and very tender, about an hour.
- Degrease, strain and reserve broth to use for the rest of the soup, or save for a different soup later (I find that the cloves flavor the turkey enough that I don't use the broth for this soup; but it's rich and delicious used in any other soup).
- Remove turkey from the bones and shred.
- In a large soup pot, saute onions, garlic and mushrooms in olive oil; do not brown.
- Add chicken broth, thyme, nutmeg and turkey meat; simmer together for 30 minutes.
- Remove 1/2 cup of soup broth from the pan in a small bowl; whisk dissolve the 2 tablespoons of flour in the hot broth and return to the soup pot.
- In the meantime, cook the fideos in 1-1/2 cups of water until done (following package directions); drain fideos, adding their cooking water to the soup.
- Simmer another 30 minutes, then add fideos and heat through, about another 15 minutes or until soup is thickened slightly.
