Souped up Split Pea Soup

"I've never been a big split pea soup fan but felt it was something I should eat. So, in the interest of fixing healthy soups for my family and clearing out the pantry while I was at it - I put together this crock pot friendly soup that is mostly split pea."

directions

  • put carrots, baby corn, onion, and pine nuts in the food processor and chop.
  • put all ingredients except chicken broth in the crock pot.
  • add 6 cups of the chicken broth.
  • cook on high for 3 hours.
  • turn down to low for another 2 hours and add the remaining 2 cups of chicken broth (if you like it thick or thinner adjust the broth to your preference).
