  • Grate cucumber, and place in a colander, pressing to drain excess liquid. Place between paper towels, and pat dry.
  • Stir together cucumber and remaining ingredients. Cover and chill at least 30 minutes or up to 2 days.
  • Enjoy on a gyro!
