  • Mix first three ingredients into a large non-metallic bowl and beat until smooth. Cover loosely with a damp towel/dishrag and let stand in a warm place for 8 to 18 hours.
  • Mix batter down. Add remaining ingredients and stir until smooth.
  • Cook on a lightly greased preheated griddle or skillet at 400°F.
  • Serve with maple or berry syrup, or toss an fried egg on 'em.

  1. Amazing! I have a young starter, so not so tangy yet, but wonderful texture. I have to say this is closer to the 8 servings, or 4 if you are a starving lumberjack who is a Sumo wrestler in the off season... I made about a dozen pancakes the size of dinner plates, so we wrapped and froze the leftovers for another time. Thanks for the great recipe! Served with boysenberry syrup and some sweetened sliced strawberries. Update: 12/2017 I've been making this for years now with a second batch of starter from several years ago, and it's even better now with an aged starter. I find that I don't need all the leavening, so I add it last a little at a time and keep an eye on how the dough reacts. If you add too much the dough collapses before you're done cooking them.
     
  2. I SO LOVE this recipe. I have just started using sourdough,{AGAIN},,, This recipe uses equal amounts of starter and flour. That makes a good SOUR dough. Higher flour ratios make a more watered down cake. THIS IS YUM.
     
  3. AWESOME! I don't think I've ever had pancakes brown up so perfectly! They are tasty, too! My half-batch made a dozen (12) pancakes. I'll definitely keep this recipe in mind as a great use for sourdough starter!
