South African Crepes

"I am from Johannesburg South Africa. I remember eating these as a child and finally found the perfect recipe, brings me right back to my childhood! Sooooo good, but remember to serve them hot! Add a squeeze or 2 of lemon juice to the crepe before you sprinkle the mixture and roll it up, makes the cinnamon and sugar stick better. Delicious!"

  • Sift dry ingredients.
  • Whisk egg yolks, oil, water, milk and juice together.
  • Whisk egg whites till stiff.
  • Mix the egg mixture into the dry ingredients to prevents lumps.
  • Beat with electric mixer.
  • Fold in the egg whites.
  • Pour very thinly into a greased pan.
  • Cook until golden brown on one side.
  • Turn over until golden brown.
  • Sprinkle sugar and cinnamon on top and roll up.
  • Serve hot.
