South Beach Diet Breakfast Crepes With Ricotta Cocoa Filling

  • For the crepe mix, beat the eggs in a small mixing bowl and add the remaining ingredients and beat until well blended.
  • Spray a small skillet, crepe or omelette pan with non stick cooking spray.
  • Pour the crepe mixture into skillet/pan and cook on medium heat until almost cooked through.
  • Meanwhile, combine together the crepe filling ingredients.
  • Flip crepe and cook just a bit more; put filling mixture in a line down the middle and roll crepe over top and cook until done.
  • *You can also flip this like a pancake and top it with the ricotta filling, rather than rolling it over.
  • *Top with sprinkled ground cinnamon, sugar free syrup or a squirt of Redi Whip, optional.

  2. I love this recipe! I used a mixture of stevia and splenda, and egg whites only in the crepe (the original was too fluffy for my taste
     
  3. Amazing! I used vanilla stevia instead of sweetner and vanilla seperately. 4 drops in the crepe mix and 1 drop iin the filling. So satisfying and filling! Love it. Even my 6year old loves it!
     
  4. I'm only rating the filling because I used my own crepe recipe. Yes, the filling is fantastic! I tripled the filling recipe and it filled about 7 crepes, I also used real sugar and not the substiture. We're bringing these with us to the beach today, looking forward to it!

  1. I found this recipe and just had to make it right away (just the crepe mix) even though I'm not on the South Beach Diet and I have never really liked creps. Glad I did! This was AWESOME! Best crepe I have EVER had! It may not be completely traditional, but it was great! I, too, cut the crepe mixture in half and served it with fresh cherries and maple syrup instead of the filling. I may try the filling some other time. Will definitely use this crepe recipe alot! Thank you SO MUCH! TheDancingCook!

Welcome! I joined this website in 2001, as a new wife and Mom of a 1 y/o and I was 28 yrs old and did not know about cooking. I found this website cause I searched the web and wanted to find a good recipe for carrots! I found that recipe and so much more here over the years. I learned so much from this website and opened up my eyes to other recipes. I now am 46 y/o. I am now divorced and my then 1 y/o son is now a Marine.
