- 1⁄2 cup part-skim ricotta cheese
- 1⁄2 teaspoon unsweetened cocoa powder
- 1⁄4 teaspoon vanilla extract
- 1 package sugar substitute
- 1 dash espresso powder
- 5 mini chocolate chips
directions
- Mix together the ricotta, cocoa powder, vanilla extract and sugar substitute in a dessert bowl.
- Serve chilled with a dusting of espresso powder and sprinkle with the mini chocolate chips.

In the original South Beach Diet Cookbook, there was a dessert recipe for Phase 1 that kept me going. The only dessert for Phase 1 in there now is complicated, time-consuming and requires special equipment that not everyone will have. The recipe was so simple: 1/2 cup ricotta cheese (part-skim), 1/4 teaspoon flavor extract (you can add other things, too, like the cocoa powder, as long as it fits into Phase 1); 1 packet of sugar substitute. Stir like crazy until well-blended. Enjoy!

This quick, easy, satisfying dessert saved me from my sweets cravings on phase 1 of the SB diet. I know they say that these cravings are supposed to go away after a while on the diet, but it doesn't work on me! As one reviewer mentioned, the brand of ricotta cheese really does make a difference, as the first time I tried it with a budget generic brand almost made me give up. If you want to splurge, try Friggo brand for smooth, creamy consistency. I've also found that Safeway's Lucerne brand has a superior smooth consistency and flavor. The expresso powder and mini chips really do add to the enjoyment, so don't skip these ingredients.

I love this dessert. I substitute cinnamon for the espresso powder and it's delicious! However, it really does depend what kind of ricotta you use. Some are very grainy and bitter, others are creamy. If you find you don't like it the first time you try it, shop around until you find a ricotta choose you like.

I live in a small rural community just south of Kansas City, MO. I have three sons, one in the Navy in Virginia, one in the Air Force in Montana, and one here in MO. All are single.
