  1. Rub the chops with seasoning and set aside.
  2. Beat eggs with sour cream.
  3. Dip the chops in eggwash.
  4. Coat with flour mixture, let"rest" on wire rack 5 to 6 minutes.
  5. Heat oil in heavy skillet.
  6. Fry chops 4 to 5 minutes each side.
  7. Plate up and serve with a dollop of very hot black bean/salsa topping.
