Southern Cast Iron Skillet Sweet Potato and Pecan Casserole

“We went south for Thanksgiving this year and this was served at dinner. This is baked and served right in a cast iron skillet; you can use a 12 or 15 inch cast iron skillet. Scrumptious; it's a side dish and dessert all in one! Prep time does not include the cooking and mashing of the sweet potatoes.”

Directions

  1. Preheat oven to 350 degrees.
  2. Mix the first 6 ingredients and pour into a greased cast iron skillet.
  3. Mix together the brown sugar, flour and melted butter; sprinkle on top of sweet potatoes.
  4. Sprinkle the 1 cup of pecans on top.
  5. Bake for 30 minutes or until a little brown and bubbly.
  6. Serve straight out of the skillet.
