"A co-worker brought this dish to a work potluck, and everyone was absolutely raving! I couldn't get enough of it, so I knew I had to get the recipe :) It is great with tortilla chips as a dip, or over some lettuce for a salad. As a bonus, it's so simple and quick to put together!"

  2. DH loved this!! I used homemade italian dressing and probably didn't have a full cup but I didn't really feel like making more. I wasn't sure if I was supposed to drain the rotel or not so I didn't and it turned out great. The next day I added avocado to change it up a bit and he loved it like that as well. Definitely a keeper for taste, ease, & nutrition!! Thanks Starry!!! Made for Veg*n Swap 26!!

Made this especially for DH as a surprise ~ he loves food surprises :) I put this together last night and sent some off for lunch with him today ~ got a call "What is this stuff ~ it's great!" so...there you go. Wonderful, colorful combination of textures and flavors. Thanks Starrynews for a new southern favorite! Made for PAC FALL 2009!
     
  5. As this can be made a head just made for tomorrows pot luck. Was slick and quick to put together. Looks nice in a plastic bowl. Now for the best part had to sneak a taste and it was good after only an hour can only imagine how it will be tomorrow. Thanks for the post.

  1. Let me tell you that this is Sooo Goood. It's a great snack food and you don't feel horrible about eating it. I'm snacking on some right now lol. It has a perfect balance of flavors. The only thing i did differently was i made my own italian dressing with rice wine vinegar and olive oil. I also omitted the jalapeno but added cayenne instead. Awesome with frito corn chips
