- 1⁄2 lb bacon, diced
- 3 onions, sliced
- 1 pinch cayenne
- 2 green onions, minced
- 2 garlic cloves, minced
- 1 (12 ounce) bottle beer
- 1⁄2 cup vinegar
- 1 tablespoon molasses
- 6 lbs greens (mustard, collard, turmip, kale, spinach)
directions
- In a large pot, fry bacon until crispy.
- Add onions, cook for 6-7 minutes, until wilted.
- Add garlic, cayenne, green onions.
- Cook for 2 minutes.
- Stir in beer, vinegar, molasses.
- Add greens, 1/3 at a time, pressing down as they start to wilt.
- Cook uncovered about 1 hour, 15 minutes.
