Southern Smothered Pork Chops

"This is the same recipe my grandma used to cook. Nothing fancy about it. No exotic ingredients. I updated it by using cooking spray instead of shortening but otherwise, it is the same. Just plain old down home comfort food. Sure is good with rice or mashed potatoes."

directions

  • Mix cornstarch and broth until smooth and set aside. Spray a skillet with the cooking spray and heat over medium heat.
  • Season chops with garlic powder, salt and pepper and cook chops 10 minutes or until well browned on each side. Remove chops and set aside.
  • Add the onion and cook over medium heat just until turning translucent but still crisp. Stir cornstarch mixture and add to skillet. Cook until it comes to a boil and thickens, stirring constantly.
  • Return chops to pan, cover and cook over low heat for 10-12 minutes or until the chops are done. Season with salt and pepper to taste.

Questions & Replies

  1. How thick does the pork chop have to be for frying this?!?! I don't want to saturate the pan with oil because I will want to try and save the drippings for the gravy; however, I am kind of weary/skeptical of how much oil I need to use..? Thanks if you can help.

  1. Sauce is delicious. I added sliced mushrooms to the onions. Also, I used pork tenderloin sliced lengthwise to the size I wanted as this cut of pork is more tender than chops. Sandy Andrew

  3. What do you do with pork chops? Try this recipe! Easy, tender and delish chops. I added chipotle chili pepper gave a smokey taste. The base is here for many different tastes. Going to try bell pepper or peas. Thanks Sandy for a very practical recipe.
