  • Preheat oven to 375 deg. Coat a 9 x 13 pan with non-stick cooking spray and set aside.
  • Combine flour, salt, and cayenne pepper together in a medium size bowl.
  • Roll chicken breast in flour mixture and evenly coat each side. Next dip chicken into the buttermilk, and then into the cornflake crumbs. (It usually takes me a little more buttermilk and crumbs than what is in the recipe.).
  • Place the coated chicken into the prepared baking dish. Bake for 20 minute or until the chicken breasts are tender and no longer pink. No need to turn the chicken over during baking.
