Salad
- 1 head romaine lettuce, washed, chopped (about 6 cups, or 1& 1/2 bags of romaine salad)
- 1 cup crouton
- 1 cup frozen whole kernel corn, thawed
- 1 red bell pepper, cut into thin strips (or just chopped)
- 1⁄2 cup fresh cilantro, chopped
- 1⁄2 cup grated parmesan cheese

Dressing
- 1⁄2 cup caesar salad dressing (bottled or make your favorite)
- 1⁄2 teaspoon cayenne pepper
directions
- Toss lettuce, corn, bell pepper, and cilantro in a large bowl.
- Mix dressing with cayenne.
- Add dressing to salad and toss.
- Top with parmesan and croutons.

Nice salad! I added grilled chicken. I just piled the ingredients onto 2 plates for DH and I for dinner. I used Chipotle dressing and we just each added our own to our plate. I don't like as much salad dressing as DH. Next time I would add some drained and rinsed black beans. Made for The Best of 2009 Cookboook Swap.

This salad is CRAZY good!!! I went light on the cilantro and used broken-up fritos for the croutons. The sweetness of the corn and red pepper was the perfect match to the spicy dressing. I served this as a side dish but will have it as the main course next time - it's that good! Thanks for posting this winner! Made for Spring PAC 2009

I made this for dinner last night, and both my boyfriend and I thought it was delicious. We're not huge cilantro fans, so I prolly used about 1/4 of what the recipe calls for and just used a little bit more corn. I also threw some chicken and bacon bits in there as my bf is trying to "bulk up" and needs protein. There was just the right amount of kick, and we both loved it :-)

We live just outside of Houston, Tx., and have lived in Texas for the last 10 years. Since Mexican food is our favortie Texas is the best place to live.

My son says I'm addicted to RecipeZaar since I discovered it almost a year ago. RecipeZaar has drastically changed my menu planning. I no longer serve the excact same meals almost every night. With picky eaters there just wasn't a lot to fix or be inspired by, but now I can search and find new recipes even they like. I'm not real original so most of my favorite recipes have already been posted, and I get excited when I actually do get to post.
