Ingredients Nutrition

  • 3 12 lbs chicken
  • 1 jalapeno, seeded, deveined and finely chopped
  • 2 teaspoons cumin, ground
  • 1 pinch ground cinnamon
  • 13 cup new mexico chile powder
  • 12 tablespoon black pepper, freshly ground
  • 12 teaspoon cayenne pepper
  • 1 12 tablespoons kosher salt
  • 14 cup amber beer
  • 2 tablespoons tequila
  • 1 anaheim chile, fire roasted, seeded, deveined and chopped
  • 1 bunch cilantro, chopped

Directions

  1. Grind the chicken using a Kitchen Aide grinder (can also use a food processor).
  2. Put into a large bowl and add the remaining ingredients.
  3. Blend thoroughly.
  4. Divide into 4 portions and put into freezer bags for later use.
