  • Set oven to 325 degrees.
  • Season beef brisket with salt and pepper.
  • In a Dutch oven heat oil over medium-high heat.
  • Brown beef on both sides; drain.
  • Combine the next 10 ingredients; pour over meat.
  • Cover tightly and bake for 2 hours at 325 degrees F.
  • Add the red peppers and carrots; bake 1 hour longer or until meat is tender.
  • Remove meat and veggies to a serving platter.
  • Skim the fat from top.
  • Reduce the pan juices for gravy.
  • Slice the meat thinly across the grain.
  • Serve with veggies and the pan juices.

  1. A definite keeper! This was sooooo delicious! I cooked this in my crockpot after browning for 8 hours and it came out so moist and tender. I only used 3/4 cup of water and added cornstarch at the end to thicken the sauce. This is by far the best brisket recipe I have ever come across - thanks.

  3. Liked the idea of carrots and red bell peppers but my brisket was far from tender after the allotted time. We liked it but probably not enough to make it again. Thank you though for the recipe.
     
  4. My husband has been begging me to make him a beef brisket. We found this recipe and gave it a try yesterday. It was FABULOUS! Definitely a keeper. We are already planning to make it again and invite friends and family over!
     
  5. Loved it, but made the following changes: 1. no water 2. replaced tomato sauce w/ 10-oz. Rotelle 3. used 1 green pepper and no carrots.
