Southwestern Casserole

"My Mom used to make something similar but I've doctored it up, like most of the things I make...just can't leave them alone! Every time I've made this it disappears and people want the recipe. It's so quick and easy, yummmy too! This was always my kids favorite!"

  • 1 12 lbs hamburger or 1 1/2 lbs ground turkey
  • 1 onion, chopped
  • 3 -6 garlic cloves, chopped (depends on if you like it)
  • 3 -4 tablespoons taco seasoning
  • 1 teaspoon cumin
  • 1 (14 3/4 ounce) can creamed corn, rinse can, 1/4C water
  • 1 (10 1/2 ounce) can tomato soup, rinse can, 1/4C water
  • 1 (4 ounce) can hatch green chilies, diced
  • 1 (3 7/8 ounce) can black olives, sliced
  • 2 cups cooked noodles, al dente
  • salt and pepper
  • cheddar cheese, grated, to cover top of casserole

  • Cook and break up meat; add onions, garlic, taco seasoning, and cumin.
  • Cook until red is gone.
  • Put mixture in a casserole.
  • Add creamed corn, tomato soup, and 1/2 cup water used to rinse the cans. Add green chilies, olives, cooked noodles, and salt and pepper.
  • Mix well; top with cheddar cheese.
  • Bake at 325 degrees Fahrenheit for 30 to 45 minutes.
  • Quick and easy meal; serve with salad enjoy! yummmmmy.

I've gotten back into cooking and find I can't leave a recipe alone, I always have to fiddle with it. I live on my 20 acres in Goldendale, WA and have a wonderful man friend that also likes to cook and help in the kitchen. My horses are gone :( and I have 3 small dogs and will be getting rid of my chickens soon. I'm a regular church goer and love our Lord, we go to bible study and I like reading my bible and recipes. I have 4 grown kids, all over the states, 2 daughters are teachers for special ed kids, my son is famous for his very small tattoos, and one daughter has problems, but don't we all??
