  1. Rub 1 tablespoon taco seasoning mix on chicken.
  2. Combine remaining taco seasoning mix, salsa, and water in large skillet; top mixture with chicken.
  3. Bring to a boil; cover, reduceheat, and simmer 10 minutes or until chicken is done.
  4. Remove chicken from skillet.
  5. Stir in rice, beans, and cheese; cover and cook over low heat 5 minutes.
  6. Top with chicken. Serve with sour cream.
