"In the South we make dressing vs. stuffing. This recipe sounds like a great alternative to the standard cornbread dressing. Prep time/Cook time does not include time to make cornbread."

  • 6 cups cornbread, prepared and crumbled
  • 1 (17 ounce) can cream-style corn
  • 2 (4 ounce) cans green chilies, chopped (or one can green chilies and 1-3 tbsp. jalapeno pepper, seeded and chopped)
  • 34 cup colby-monterey jack cheese, shredded
  • 12 cup green onion, chopped
  • 12 cup red bell pepper, chopped
  • 1 tablespoon cilantro, chopped
  • 1 egg, beaten
  • salt & freshly ground black pepper

  • Combine in a large bowl corn, chilies, cheese, onion, red bell pepper, cilantro, egg, and salt/pepper to taste. Mix well. Add cornbread; toss to mix. Bake in an ungreased 2-qt. casserole in a 325 degree oven for 45 to 60 minutes or until golden brown.
