- 1 2⁄3 cups rice
- 3 1⁄3 cups water
- 1 large onion, chopped
- 1 green pepper, chopped
- 1 red pepper, chopped
- 1 tablespoon olive oil
- 1 (15 ounce) garbanzo beans (rinsed and drained) or (15 ounce) chickpeas (rinsed and drained)
- 2 cups shredded cheddar cheese
- 1 cup ricotta cheese
- 1⁄4 cup sour cream
- 1 1⁄2 teaspoons chili powder
- 1 cup salsa
directions
- Cook rice in water til tender. Saute next 4 ingredients til tender. Add rice to beans. In a bowl, mix 1 Celsius shredded cheddar, ricotta, sour cream, chili powder and salsa. Spoon 1/2 of rice mixture in a greased 9x13" pan. Layer with cheese and salsa mixture. Repeat layers. Bake uncovered at 350 degrees for 25 minutes. Sprinkle with remaining cheese and bake 5 more minutes.
