  1. Cook rice in water til tender. Saute next 4 ingredients til tender. Add rice to beans. In a bowl, mix 1 Celsius shredded cheddar, ricotta, sour cream, chili powder and salsa. Spoon 1/2 of rice mixture in a greased 9x13" pan. Layer with cheese and salsa mixture. Repeat layers. Bake uncovered at 350 degrees for 25 minutes. Sprinkle with remaining cheese and bake 5 more minutes.
