Spaghetti Omelet

"If you like spaghettie and omelets, then you'll like this one! This is another Maltese dish my mother use to make for us, its inexpensive and most people already have all the ingredients in their kitchen. The texture is crunchy and the kids will love it because the taste is also subtle. You can also use leftover pasta, broccoli etc. as this was what my mother did not to waste food."

  • In a large bowel mix the eggs, garlic, thyme/parsley, broccoli/shrimp, 1 tablespoon cheese and let sit for 5-10 minute.
  • If the spaghetti is still hot run it under cold water. When the pasta is cooled mix it well with the egg mixture.
  • Heat the olive oil in a large frying pan until very hot but not smoking. Add the pasta mixture and fry up until golden crisp and flip over to the other side and top with one tablespoon of cheese. The omelet texture should be cooked enough so you will need a pizza cutter to cut up like pizza slices. Serve with additional cheese on the side. You can serve with ketchup, however, once you become good at it I've had people say that the ketchup is sacrilegious, although the kids like it!.
