  • Remove casing from sausage and cut into bit size pieces. About 6 pieces for large sausages.
  • In a skillet large enough to hold the entire recipe with a lid, add 1 tsp olive oil and sausage. Cook sausage till done with a golden brown outside.
  • While sausage is cooking, chop onion, peppers. Slice mushrooms.
  • Remove sausage to a paper towel covered plate. Discard grease but leave bits in pan.
  • Add 1 tsp olive oil, garlic,mushrooms and veggies to pan. Cook till veggies are just starting to become tender, stirring often.
  • Add the sausage and everything else to the pan. Medium heat till it starts to bubble. Reduce heat to simmer and cover. I sometimes add a little water to attain the right thickness. After simmering for 1 hour adjust spices to taste.
  • I usually make this sauce in the morning and let it simmer till dinner time. The longer the simmer, the better the dinner.
