- 6 links mild Italian sausage
- 2 teaspoons olive oil
- 1 bell pepper
- 1 sweet red pepper
- 1 small onion
- 1 cup mushroom
- 2 garlic cloves, minced
- 8 ounces tomato sauce
- 8 ounces diced tomatoes
- 6 ounces tomato paste
- 2 tablespoons Worcestershire sauce
- 1 teaspoon liquid smoke
- 1⁄2 - 1 teaspoon kosher salt
- 1⁄2 teaspoon ground oregano
- 1⁄4 teaspoon crushed red pepper flakes
- 1 tablespoon parsley flakes
- 3 bay leaves
- 1⁄2 tablespoon dried basil
- 1⁄2 - 1 tablespoon black pepper
directions
- Remove casing from sausage and cut into bit size pieces. About 6 pieces for large sausages.
- In a skillet large enough to hold the entire recipe with a lid, add 1 tsp olive oil and sausage. Cook sausage till done with a golden brown outside.
- While sausage is cooking, chop onion, peppers. Slice mushrooms.
- Remove sausage to a paper towel covered plate. Discard grease but leave bits in pan.
- Add 1 tsp olive oil, garlic,mushrooms and veggies to pan. Cook till veggies are just starting to become tender, stirring often.
- Add the sausage and everything else to the pan. Medium heat till it starts to bubble. Reduce heat to simmer and cover. I sometimes add a little water to attain the right thickness. After simmering for 1 hour adjust spices to taste.
- I usually make this sauce in the morning and let it simmer till dinner time. The longer the simmer, the better the dinner.
