  1. Remove casing from sausage and cut into bit size pieces. About 6 pieces for large sausages.
  2. In a skillet large enough to hold the entire recipe with a lid, add 1 tsp olive oil and sausage. Cook sausage till done with a golden brown outside.
  3. While sausage is cooking, chop onion, peppers. Slice mushrooms.
  4. Remove sausage to a paper towel covered plate. Discard grease but leave bits in pan.
  5. Add 1 tsp olive oil, garlic,mushrooms and veggies to pan. Cook till veggies are just starting to become tender, stirring often.
  6. Add the sausage and everything else to the pan. Medium heat till it starts to bubble. Reduce heat to simmer and cover. I sometimes add a little water to attain the right thickness. After simmering for 1 hour adjust spices to taste.
  7. I usually make this sauce in the morning and let it simmer till dinner time. The longer the simmer, the better the dinner.
