  1. Heat a large pot. Add olive oil, yellow onions, bell pepper, garlic and celery. Sauté until onions and celery are translucent.
  2. In a skillet, cook the ground beef. Pour off any fat or water. Add to large pot.
  3. Add tomatoes. Then add and stir in all spices and grated carrots. Bring to bubbling.
  4. Reduce to simmer. Simmer, covered, for at least 4 hours. 6-8 hours is better, the flavors develop further. Check a few times, stir and recover.
  5. Freezes well.
