- 5 ripe tomatoes, diced
- 10 fresh basil leaves, cut in strips
- 1⁄4 cup olive oil
- 2 garlic cloves, minced
- 1 teaspoon salt
- 1 teaspoon pepper
- 1⁄2 teaspoon crushed red pepper flakes
- 1 lb spaghetti
- 4 ounces provolone cheese, grated
directions
- Stir first 6 ingredients in bowl to mix. Cover and let stand about 30 minutes to blend flavours.
- Cook spaghetti in pot of salted water until al dente.
- Transfer tomato mixture including juices to a shallow serving dish. Add hot spaghetti, toss to mix. Sprinkle with cheese and serve immediately.
