  • Bring a salted pot of water to boil.
  • Place bacon in cold skillet and cook over medium heat until crisp.
  • Remove bacon and add onion to skillet. Cook until soft.
  • Add tomato paste and cook for 1 minute.
  • Cook the pasta, reserve 1 cup of cooking water.
  • Return skillet to low heat.
  • Whisk eggs and parmesan in a medium bowl.
  • Add the beaten eggs, pasta and half of the cooking water into the skillet.
  • Cook, stirring continuously, until the eggs are thickened, about 2 minutes.
  • Add bacon, parsley, and more pasta water if needed to coat pasta in sauce.
  • Season with salt and pepper to taste.
