  • Place spinach in a saucepan. Simmer over low heat, covered, for 10 minutes. Set aside.
  • Place rice in a 2qt saucepan, add enough water to cover. Bring to a boil, stir in rice with a fork, then simmer until water is absorbed.
  • Add the partially cooked rice to the spinach, stir carefully with a fork to mix. Add salt, pepper and mint. Cover and simmer on low heat for 10-15 minutes, until rice is fully cooked.
  • In a frying pan, heat olive oil to the sizzling point. Do not allow to burn.
  • Pour holt oil over the rice and spinach, stirring carefully to mix.
  • Cover pot. Let sit for 10 minutes before serving.
  • Serve in a shallow bowl and sqeeze plenty of lemon juice over pilaf.

  1. I took Kitten's advice and added in fresh garlic and used homemade chicken broth... I also added in 1 shallot with great results. We loved this with our Greek themed dinner!
     
  2. we really enjoyed this dish! I made as directed only add in some fresh garlic and used homemade chicken broth in place of water, I also mixed in some feta cheese at the end, this was so delicious and was made for KK's forum Greek tag game

Yikes!! My daughter had fun in PaintShop Pro!! What she can do with a picture. My husband and I live in the "bush" and hour from the closest town. Life here is quiet, yet so much more busy than when we lived in the "city". We grow our own veggies, several kinds of berries, and grow lots of hard neck organic garlic. We have 60 chickens, 4 dogs, 1 cat, 1 bird. Quite the menagerie. I make all my own breads, and sell them (along with the eggs).
