Spanakorizo- Spinach With Rice
"From a book my dear friend sent me, The Greek Cookery Book. Thank you Nurse Janey, this is my go to Greek cookbook now. The stories and pictures are amazing and it brings me back to my family in Greece.
Cooktimes are approximated, depending on how you judge medium heat and I judge medium heat. NOTE- change in amount of oil has been corrected. Thank you Elmotoo The cookbook calls for 1 c oil but like ELmo I feel it is too much, I took the liberty of draining a bit after cooking. Feel free to recduce to 1/2 c or to use and then drain if needed."

- Wash the spinach well and cut as finely as possible. (A trick to doing this is to roll the spinach and cut across the rolls, this makes it easier to cut fine strips.).
- Clean onions and cut into fine strips.
- Put onions into a saucepan with the oil and cook til softened.
- Add dill and cook a bit longer (approx. 1 min on med-low heat).
- Add the spinach, salt and pepper, add 3 c water and allow to boil.
- Just before spinach is fully cooked, add in 3 more cups water and the rice.
- Cover the saucepan and allow the ingredients to cook, stirring occassionally.
- When the water is absorbed, (approx. 20-25 minutes) serve with freshly ground pepper and lemon juice.
- Enjoy.

1c oil? I can only think of a coobook I brought back from Greece which lists ingredients measured in teacups. 1c is wayyyyyyyyy wayyyyy too much oil. 1/4 to 1/2 would be most sufficient. The flavor of the scallions didn't come through. But I can see the promise....other than very greasy, it was very tasty! And with all that spinach, quite healthful, too. Thanks, Connie. DH and I traveled across country several times and our children are seasoned travelers as well. Road Trip are 2 of my favorite words. The kids and I have done a few trips as well down the eastern seaboard and there are plans for more. Both DD and DS are gypsies as well and think nothing of taking a road trip to visit home or each other. LOVE IT <br /><br />I live in Western New York and love it here, snow and all. I am a special education teacher and enjoy my career. The sense of wonder and gratification comes daily. My favorite pastime is spending time with my family! I also love to read, listen to music and watch good movies. We have Friday night pizza night here, which means I do not cook! I love Friday's. I started this custom when my children were small and we would cuddle on the floor and play games together and eat pizza. (Highly recommended for all moms out there, dads too.)
