  • In a soup pot, heat olive oil over med-high heat.
  • Add shallot; saute 3 minutes.
  • Add broth, zucchini, mushrooms, and tomatoes; bring mixture to a boil.
  • Decrease heat to medium; simmer 15 minutes.
  • Stir in ham, chicken, thyme, salt, and pepper to taste; continue to simmer 5 minutes.
  • Remove from heat and let stand briefly before serving.
