  • Place fish fillets in a non-stick or greased baking dish.
  • Arrange tomato and cucumber slices on top.
  • In a saucepan, cook onion, green pepper, and minced garlic in butter until onion is tender, but not brown.
  • Remove from heat.
  • Stir in parsley, wine, lemon juice, and marjoram.
  • Spoon over fish.
  • Bake in 375°F oven for about 25 minutes, or until fish flakes easily when tested with a fork.
  • Serve with wild rice.

  1. Lots of good things to say about this recipe. It uses healthful ingredients, and is not loaded with bad carbs -- would be "legal" on most popular diets. It is easy to prepare, and can be made with ingredients that many people keep in their kitchen. The only change I would make is to add a little salt and pepper over the top of the preparation before putting it in the oven. Otherwise, this is a versatile recipe that could be used well with chicken breast meat, veal, or maybe even tofu. A classic preparation!
     
  2. What a phenominal recipe! Super easy and super healthy! However, flounder is VERY thin fish...and it tends to shrink a bit (this was my first time making flounder)...so buy lots...leftovers of this recipe would be awesome! Thank you so much for sharing!!! xo LA :-)
