Spanish Meatballs

"Put some Pizzazz inot winter meals and serve Spanish meatballs using low-fat nutritious ground turkey. Serve them over basmati rice (brown rice if you want an extra hit of goodness!!)"

  • In a large bowl, combine turkey, salt , half the chopped onions, half the garlic, paprika, 1/2 cup roasted red peppers, breadcrumbs, parsley and egg. Mix turkey until well combined and set aside.
  • In a large pot on medium, heat oil and sauté remaining onions until transparent. Add all remaining ingredients and bring to a simmer.
  • With slightly damp hands, form turkey mixture into meatballs, approximately 2 tablespoons in size. Gently drop meatballs into simmering sauce until all the turkey mixture is finished. Cover pot and let simmer on low for 1 hour or until meatballs ore cooked through.
  • TO MAKE RICE:.
  • Follow package directions, adding saffron threads to water. Try using vegetable or chicken stock instead of water for more savory rice.

Her sweets are fantastics, especially her pound cakes, Yummm <br> <br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
