  • Fry bacon. Take bacon out of pan and put aside. Fry onions in bacon fat. Take onions out of pan leaving as much fat in pan as possible. brown rice in bacon fat. Add 3 cups of water to browned rice and bring to boil. Boil 6 minutes or until rice is slightly tender. Rice will finish cooking in oven. Drain rice. Add tomatoes (breakup with hands), bacon (broken into pieces), onion and green peper to rice. Add enough paprika to change color of rice or desired amount. Add salt and pepper to taste. Combine all ingredients well and place in oven at 375 for 45 minutes.

  1. I really liked this recipe but the instructions were a little vague. With a little bit of tweaking this rice dish could go to good to fabulous. Here is what I did. The rice to water ratio was really off. I used 1 part rice to 2 parts water, added salt and pepper for seasoning. I added 1 tblsp of paprika to the browned rice. The bacon was really good and made this dish flavorful. Made for the Dining Daredevils for ZWT5
     
  2. I decided to try this because of the bacon. My husband typically loves anything with bacon. I am going to try to make it again with a few adjustments as I had a little trouble with the ingredients and directions as written. I ended up doubling the rice (it didn't seem like it would be enough) and the rice/veggie ratio seemed good. I was unclear about the type of "green pepper" so I went with a green bell pepper. I am not sure if that was the right flavor so next time I will use a green "ortega" type chili pepper. The other thing I would change is the amount of spices, definately use less paprika and add some salt and pepper. I liked the idea of cooking the rice initially on the stove and finishing it off in the oven. The amount of liquid in the tomatoes was perfect for finishing the rice in the oven. Made for the Saucy Senoritas ZWT 5.

I loveto cook and try new recipes. I find myself in the kitchen or watching food network anytime I am boerd. Maybe this is why I am a little overweight LOL
