  • Fry rice, pepper and onions slowly until yellow in a heavy pot.
  • Add water,tomato, and spices.
  • Bring to boil.
  • Cover and simmer until rice is tender and liquid is absorbed,approximately 25 min.
  • Variation: Subtitute 1 can (16 oz.) tomatoes for fresh.
  • Use 2 teaspoons of chili powder.
  • or use one onion and one bell pepper.

  3. 5 stars! Very easy to make. I didn't have fresh or canned tomatoes so I used Rotel tomatoes. Helped spice it up a bit and was very good. Don't leave out the cumin, that's what makes it so wonderful.
     
  4. I was looking for a recipe using uncooked rice and this worked out perfect. My family loved this recipe. The cumin is a nice addition. I used my homemade stewed tomatoes and added hamburger,extra chili powder and salt according to my family's taste. It made a great low cost meal. I'll make this again soon.
     
  5. I used way more peppers and threw in some diced tomatos. It was still really bland, even after adding tumeric for color/flavor. I had to add more salt. But a nice idea, something to expland on.

Tweaks

  1. Good recipie! I used instant rice and more cumin as well as chicken broth instead of water. I also used both red and green bell peppers and no garlic. It did very well and was a hit with chicken enchiladas.
