Spanish Rice and Shrimp

"This recipe is easy and delicious. Don't know where my mom got it, but it's been in the family for many years.I've used both fresh and frozen shrimp with good results."

  • Preheat oven to 350 degrees.
  • In an 8 X 10-inch casserole, combine all ingredients, except shrimp.Stir and cover.
  • Bake for one hour, stirring half-way through baking time.
  • Uncover, add shrimp and bake an additional 1/2 hour.

<p>I'm 59 and have lived in East Texas for 14 years, having lived most of my life in the Dallas area. My favorite thing to do has always been cooking, especially one pot meals like soups, stews, and chili that can be served with crackers, homemade crusty bread, or cornbread. Of course I cook other things; love to barbecue and love Mexican food, but the one pot meals are my favorite and most comforting, especially in the cooler months.</p>
