Spapple Salad (Spinach & Apple)

- 1 cup water
- 1⁄2 cup sugar (for diet use 1/4 cup zylitol and 1/4 cup Splenda)
- 5 -6 tablespoons fresh lemon juice
- 1 tablespoon cornstarch
- 1 tablespoon butter
- 1 egg
- 1⁄8 teaspoon salt
- 1⁄2 cup craisins
- 8 cups fresh spinach
- 2 large apples (Pacific Gold is good choice)
directions
- For Dressing, mix first 7 ingredients together in saucepan. Add Craisins and cook over medium heat, stirring constantly until mixture is thickened. Cool.
- Wash spinach and pat dry. Remove any stems.
- Peel, core apples and cut into chunks.
- Mix spinach and apples, then toss the salad with the dressing and serve.

I love to cook and read cookbooks like others read novels. I especially like recipes that look like I spent a day in the kitchen but really only took a little of my time. I guess that comes from so many years in the kitchen plus I am a Cosmetologist in Florida and after the "season" (when the snowbirds are down) it takes me a while to re-coup. I love this site as I can type an ingredient in and find all kinds of recipes. With my busy schedule, I don't have as much time to spend in the kitchen as when I was a full time "Domestic Engineer".
Besides working in a shop, I am a Minister's wife and we are in the process of "planting a church" in our area.
I have 3 grown children and 19 grandchildren. The first was married in May so I guess it won't be long before I will be a ggrandmother. It amazes me how they are all growing up but I am not getting older! :-)
