Special Authentic Thai Omelette( Khai Jeow Khun Chai )

"This Thai-style preserved turnip (preserved/salted radish) omelette or better known as chai po locally is another humble, Oldtimer favourite often cooked by my friend. It goes so well with porridge and Jusmin rice cook. The ingredients are minimum (just preserved turnip, eggs, red chilies and holy basil. I always wash the preserved turnip before cooking, to get rid of excess saltiness or any dirt highly recommended.No need to season many fish sauce in this recipe.It's already salty from the preserved turnip. We eat with the fish paste dip and steam vegetables. And goes really well with Sri Racha Thai chilli sauce.So yummy!"

  • Rinse the preserved turnip with water for a few times. Drain and squeeze the water dry with your hand.Cut into a small pieces.
  • Crack the eggs into a small bowl and lightly beaten. Add the preserved turnips, Red Goat Pepper sliced into small pieces. Holy basil leaves and continue to beat the eggs for a few more times. Add a little bit of fish sauce if desire and water and whisk with a fork until mixed frothy.
  • Heat up a wok and add oil. When the wok is heated, pour the egg mixture into the wok. Swirl the egg around the wok and wait for the bottom to set and turn brown. About 1 - 2 minutes. Flip it over and continue to cook.Serve immediately with Sri Racha red chilli sauce. And Grilled Fish chili paste with steam vegetables.
  • Grilled Fish Chili paste recipe ( Nam Prik Pla Yang ).
  • Prep : 20 mins Cook 10 minutes.
  • 1. 1/2 cup Crispy fish.
  • 2. 15-20 Goat pepper.
  • 3. 15 clove Garlic.
  • 4. 10 Shallots.
  • 5. 1 teaspoons Salt or 1 tablespoons Fish sauce.
  • 1. Roast ingredient 2-4 and set aside. (2 minutes for Chili / 3-5 minutes for Shallot).
  • 2. Pound dried chili until finely. Add ingredient 1-4 and season at last.
  • 3. Fry with oil and sprinkle with crispy pork for more delicious.
  • 4. Add lime juice, horseshoe crab, grilled shrimp and sugar just a little (optional).

According to me, cooking as an activity is not simply about preparing food which one can eat but it has many sides to it.I find cooking to be a great stress reliever. Each time I cook and prepare a dish I get a sense of achievement and satisfaction. This is because a dish is something you create by your own work and creativity, and any such activity gives pleasure. Cooking is also very scientific. Often I experiment with new ingredients to see how the end product comes out to be. Sometimes the end product&nbsp;is good and sometimes it ends in a disaster, but over a period of time one gets an understanding of what combination of ingredients will work. There is also science involved in preparing and cooking the ingredients of a dish. For example, if one is preparing meat rice, one need to have an understanding of the time the meat should be marinated, and the temperature and pressure on which the meal should be prepared. If the temperature and pressure at the time of cooking are not right then the taste of the dish does not come out well. I also use cooking to learn about other cultures. Preparing dishes which have originated in other countries gives you an idea of the tastes people of that country might have, the sort of ingredients that is are available in that country. Cooking is also a great social binder. I sometimes cook with friends and family. Everybody works together in a group towards a common goal, and contributes in their own way to preparing the dish. In my view, cooking in a group increases the bonding between people. There is always something new to explore when cooking. One dish can be prepared in many ways, and there are a large number of dishes that I have never tried cooking. In my view one can never get bored of cooking.</p>
