“This comes from vegweb.com. They got rave reviews there so I'm guessing they're pretty darn good! Can't wait to try them! Plus, they're vegan!! I'm not exactly sure how many cookies this makes (12-15 is a guess). Substituting applesauce or fruit puree for the oil was a recommendation, as well as carob chips or raisins in place of chocolate chips. Also another person suggested subbing 3/4 sugar with 1/4 maple syrup and 1/2 brown sugar, adding a dash of nutmeg, some allspice, and even a banana! These are pretty versatile, so whatever strikes your fancy.”

Directions

  1. Mix canola oil, cornstarch mixture, Sucanat, vanilla, and coconut well in a good-sized bowl.
  2. In a separate bowl, sift flour, cinnamon, salt, and baking powder together.
  3. Add oats to this mixture.
  4. Add the dry mixture to the wet one and mix well.
  5. Mix in chocolate chips.
  6. Form the dough into small balls or patties on a greased cookie sheet.
