“I found a recipe for pumpkin bread in one of my cookbooks and amended it to this. With a few changes I got a great tasting light spice bread that is almost cake like. Everyone I have given this to in the past few days have asked for the recipe. I have also tried this with honey (subbing for the white sugar) - I just reduce the applesauce to 1/4 cup. This is also great with any flavor yogurt.”

  1. Cream together the butter and sugars. Add the applesauce, eggs, vanilla, spices, flax seed meal and wheat germ- mix well. Mix together the flour, baking soda and salt. Add to wet ingredients just till mixed. Stir in pumpkin, sour cream and nuts.
  2. Spoon into large greased muffin tins or a bundt pan. This will make 12 large muffins or a full bundt pan.
  3. Cook bread for 50-60 min and muffins for 25-30. Be sure to check for doneness with a toothpick.
