  • CHICKPEA SIMMER.
  • In a large skillet, heat oil over med.
  • heat; fry onion, garlic, salt, pepper and hot pepper flakes until softened, 3 minute Add chickpeas and tomatoes; bring to boil.
  • Reduce heat; simmer 20 minute Stir in spinach.
  • Meanwhile, combine parsley, cumin, coriander, salt, pepper and garlic; rub over chops.
  • In a nonstick skillet heat oil over med-high heat; fry chops, about 10 minute Serve with chickpes mixture.

My husband and I really enjoyed this meal.I respected the ingredients except I did'nt have any fresh parsley.I loved the flavour of the pork chops and the chick pea simmer is a perfect dish for any vegetarian .I added white rice as a side but I think even mashed potatoes would be yummy.I will for sure make this again but as a personal preference I would replace the chick peas with white kidney beans.The spinach was a nice touch both ascetically and in taste. Thanks for the recipe Princess! *sigh* My last wee one in Fall PAC 2006!
