- 2 tablespoons fresh parsley, minced
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
- 2 cloves garlic, minced
- 4 center-cut pork loin chops (about 1 3/4lbs)
- 1 tablespoon vegetable oil

CHICKPEA SIMMER
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
- 1 pinch hot pepper flakes
- 1 (19 ounce) can chickpeas, drained and rinsed
- 1 (28 ounce) can diced tomatoes
- 4 cups packed fresh spinach, trimmed
directions
- CHICKPEA SIMMER.
- In a large skillet, heat oil over med.
- heat; fry onion, garlic, salt, pepper and hot pepper flakes until softened, 3 minute Add chickpeas and tomatoes; bring to boil.
- Reduce heat; simmer 20 minute Stir in spinach.
- Meanwhile, combine parsley, cumin, coriander, salt, pepper and garlic; rub over chops.
- In a nonstick skillet heat oil over med-high heat; fry chops, about 10 minute Serve with chickpes mixture.

My husband and I really enjoyed this meal.I respected the ingredients except I did'nt have any fresh parsley.I loved the flavour of the pork chops and the chick pea simmer is a perfect dish for any vegetarian .I added white rice as a side but I think even mashed potatoes would be yummy.I will for sure make this again but as a personal preference I would replace the chick peas with white kidney beans.The spinach was a nice touch both ascetically and in taste. Thanks for the recipe Princess! *sigh* My last wee one in Fall PAC 2006!
