Directions

  1. Peel sweet potatoes. Slice each in half lengthwise and into four wedges (8 wedges per potato).
  2. In a large bowl, combine sweet potato wedges, oil, chili powder and cayenne. Season to taste with salt and pepper. Toss to coat.
  3. Arrange wedges on prepared baking sheets. Roast in center of preheated 425* oven, tossing once or twice, for 25 minutes.
  4. Transfer to top rack of oven and cook for 10 more minutes or until cooked through and crisp.
