  • Combine first five ingredients in a large stockpot over medium-high heat; bring to a boil. Reduce heat to low. Add the vanilla bean; cover and simmer 15 minutes.
  • Remove from heat; let stand at room temperature for 1 hour or up to 4 hours. Discard solids. Stir in pomegranate juice. Reheat over medium heat until warm.

  1. DD loved this but to me the star anise flavour was too strong and I don't think I liked the vanilla in this either. I used organic vanilla flavour without alcohol instead of the bean and Pom pomegranate juice. I think it would have been better with real unsweetend cranberry juice. I won't make this again. Made for Comfort Cafe - Snow Queens Round 01/10.
     
  2. Delicious! I accidentally added the pomegranate juice in with everything else in the beginning but it didn't seem to hurt it. Rather than boiling it first, I just simmered it uncovered for about an hour to make the aroma permeate the house. I used a splash of vanilla extract since I had no vanilla bean and I put a handful of cranberries in towards the end. I only made a small batch (1/3 the recipe) which my little girls drank most of, so when I was down to the last cup, I added a cup of merlot to it, microwaved it, and voila, mulled wine for one!
