Spiced Pumpkin Waffles

"These waffles are my kids new favorite waffles. They're delicious! They have a light texture and the pumpkin flavor is not overpowering. The serving size is for Belgian waffles, but they will work fine in a regular waffle iron also."

  • Mix together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in large bowl.
  • In a second bowl, add eggs, sugar, pumpkin, milk, and butter; beat well.
  • Gently fold in the flour mixture.
  • Cook according to your waffle iron directions.
  • I do these in my belgian waffle iron and it uses about 1 cup batter and takes 4-5 minutes to bake.
  • They come out a nice deep, golden brown.
  • These are great with a little bit of syrup, but would also be great with honey butter.

  2. Is that a 15oz. can of puree? I don't used canned but I know that it's just under two cups of fresh for a 15oz can. I think im going to try it this morning. I was just wondering because I've seen 29oz cans too.

  1. Great taste, perfect balance of pumpkin and spices. As written, there is too much milk which makes for a thin and soft waffle. We enjoyed them, but next time I'd start with 1 cup milk and add more as needed to make a thicker batter. Thanks for sharing the recipe!
     
  2. These waffles were so good! I loved the creamy texture, almost like pumpkin pie. My husband loved them! Will definitely make again. I was out out of ginger so I just threw in some pumpkin pie spice.
     
  3. stay away! I followed the recipe exactly and they came out as a pile of mush. I make Belgian waffles often and this is the worst experience I've had with a recipe. Even after over cooking them for 10 minutes they were mushy and tasted like a sponge.
     
  4. 1 star I am a pumpkin fan and these waffles were a disappointment.
     
  5. Made just as written except added a tsp of allspice as well. Delicious. Took 4 minutes in my Mickey Belgium waffle maker.

Tweaks

  1. Delicious but reduce the milk to 1 cup
     
  2. Had to lower setting on waffle iron. Outside got too dark before inside seemed cooked. Cooked additional time in toaster oven to get rid of sogginess. Picky son liked them after toasting.
     
  3. Fresh pumpkin purée, no ginger sine I didn’t have any
