Marinade
- 2 limes
- 2 -4 tablespoons sriracha hot chili sauce
- 1⁄3 cup rice vinegar
- 2 teaspoons chopped garlic
- 1 (8 ounce) container sour cream
- 1 (12 ounce) can coconut milk

Kebabs
- 1 lb chicken, cubed
- 1 lb boneless beef top sirloin steak, cubed
- 2 green bell peppers, cubed
- 2 red bell peppers, cubed
- 1 large onion, cubed

Dipping Sauce
- 1 (8 ounce) jar plum sauce
- 2 limes, juiced
- 1 -2 teaspoon garlic (or to taste)
- 1 -2 tablespoon rice vinegar
directions
- 1. Soak skewers overnight.
- 2. Cube chicken and beef- put into separate bowls. Mix marinade ingredients and pour evenly over chicken and beef. Refrigerate for 2 hours maximum.
- 3. Cut up vegetables and place in refrigerator until ready to assemble.
- 4. After marinating time is over take meat and vegetables out of fridge and start to assemble the skewers in the fashion that you like.
- 5. Preheat oven to 500°F Bake for 5-7 minutes turn and cook again for 5-7 minutes. (Because meat is cut into such small pieces it will cook fast and completely through).
- 6. To assemble marinade mix all ingredients together. You can serve this cold or warm.

We made this recipe for dinner last night. I used all beef instead of mixing chicken and beef. We marinated the meat for about 1.5 hrs then threw the skewers on the George Foreman grill. I did not have the ingredients to make the dipping sauce. This was a good recipe, but I wish the marinade had tasted a bit stronger once the meat was cooked. Next time I will use regular coconut milk (all I had this time was light) and more sriracha sauce and marinate it a full 2 hrs (or a bit longer) to try to increase the residual marinade flavor. Thanks for sharing.
