  • Heat oil in a frying pan. Fry onion for 5 minutes. Stir in garlic, ground and fresh coriander, cumin, chillies, sugar and tomatoes. Crumble in stock cube.
  • Stir in beans and simmer for 10 minutes.
  • Preheat grill to high.
  • Transfer mixture to an ovenproof dish. Scatter with tortilla chips and cheese. Season to taste with salt and pepper.
  • Grill until cheese melts.
  • Serve with sour cream.
